19-01-08 - AG#17 Chiswick

I make this one my 17th brew - and a bit of an emergency brew session yesterday (realised we have a load of mates round in a shade under three weeks!) - and so no pics unfortunately :(

Based on Fullers Chiswick:

3.9kg Pale
190g Crystal

Mash 66C for 60min

Hops:
22g Target 9% 60min
12g Northdown 7.9% 15min
12g Challenger 5.6% 15min
14g EKG steep at 80C for 15min

Yeast was a big slug of slurry scrounged from the bottom of the other FV - it was Brakspears originally and had just finished the Boadicea brew I did with it (and it did a fine job getting from 1058 down to about 1010-1012 by the looks of it!). I had to rack that beer into another FV to give me access to the yeast - I'll have to leave it in there as a secondary for a week before I'll have chance to bottle!

Despite the short mash, everything was fine and got 24-odd litres at 1039. I'll dry hop this one with 14g EKG (4 days or so) and add finings when it's in the keg - hopefully it'll be ready for drinking by the 6th... all looked healthy this morning in the FV, and this morning (8 hours) had a head developing - after 18hours, it had reached the lid of the FV so everything appears to be going nicely 8)

Emergency sessions are always the best. Hope it turns out well. You're certainly making your yeast work for a living.

Cheers - the yeast seems to be OK with it - though it's the third brew with it so I'll probably ditch it and start over with a new lot from another couple of bottles at some point. Looks like it's mostly done now.
