Andy, I'm planning a Hefeweizen for my next brew. My wife wants me to make something she like. She would like something like Hoegarden but I think the recipe you have done would be just the thing.
I have ordered the malt and yeast but they did not seem to have any Hersbrucker is stock. However, I have the majority of the Hallertau that I used in my last batch - in your opinion do you think these would suffice?

I have to admit to getting a bit confused on the whole issue (hence the post I suppose).
I have seen some places advertise them as Hallertau Hersbrucker (I think Hersbrucker is the area they come from).
Looks like I'll be just throwing in what I have. I am aiming for the week after next for another evening brew.

The bitterness on this beer is so low you won't notice the difference between Hersbrucker and any other hop so long as the IBU's match.
Of course if you use a traditional English hop like Fuggles you may have an odd hybrid beer on your hands but even then I don't think it would really matter as the taste comes from the yeast rather than the hops.
I'm now supping a half litre of this beer myself. It goes down a treat but don't half make me burrrp
