AG #5 - APA

For this one i wanted to brew something along the line of the Oakleaf's Hole Hearted - A pale single hop brew using cascade. I have no idea what grain bill is in this so i just kind of made it up using what i had.

So it's a 23 litre brew using the following grain:

5000g pale malt
500g wheat malt
100g pale crystal malt
50g crystal malt

20g Cascade (90min) 15.4 IBU
44g Cascade (15min) 15.6 IBU
20g Cascade (Steep)

I may also dry hop with whats left from the 100g pack but undecided.

Hit the target og of 1.048 using 65% efficiancy as my last 2 brew's have been
For the yeast i cultured some from the bottom of Hole Hearted using the method in graham wheeler's new book. During the boil i ran of 1ltr of wort and cooled it. Once cool i poured off the beer from the starter and added it on top of the yeast and gave it a good shake. By the time i got to pitching it the airlock was bubbling nicely.

Yhe main fermeter was a little full and i didnt want it to spill yeast again so i decented some into a demijon. It's handy to see the fermentation going too.

Next day it's fermeting nicely and down to 1.018 already. After a taste it is nice but needs more bitterness and hoppiness to match the hole hearted i'm trying to replicate:

Nice pics! Someone at work has just walked past my screen, looked at the impressive krausen shot and said 'Souffle?' :D What yeast did you use? It almost looks like a US-05 head.

Hi, the yeast was recovered from a bottle of Hole Hearted, not sure what yeast they use but it's fast - it was pitched sunday afternoon and is already down to 1.012
