My Daughters Christening Ale - Dunked & Disorderly 25/05/08

Brewing an ale for the BBQ after my Daughter's christening in a few weeks.

I'm loving APAs & AAAs at the moment so it's that sort of style.

Dunked & Disorderly:

Batch: 42L
Target OG: 1047

Fermentables

UK Pale Ale Malt 7.500 kg 86.7 % 4.5 In Mash/Steeped
UK Medium Crystal 0.750 kg 8.7 % 9.5 In Mash/Steeped
UK Torrified Wheat 0.400 kg 4.6 % 0.1 In Mash/Steeped


Hops
Variety Alpha Amount IBU Form When
NZ Cascade 5.5 % 25 g 9.1 Loose Whole Hops First Wort Hopped
NZ Nelson Sauvin 11.5 % 25 g 19.0 Loose Whole Hops First Wort Hopped
NZ Nelson Sauvin 11.5 % 45 g 1.4 Loose Whole Hops 1 Min From End
NZ Cascade 5.5 % 45 g 0.7 Loose Whole Hops 1 Min From End
NZ Nelson Sauvin 11.5 % 30 g 0.0 Loose Whole Hops At 80c

Yeast wise it'll either be 2x Notts or 1 Notts & 1 SO4

That's going to be excellent - nice one!

Gotta love the Cascade and Nelson combo.

No 15/20 minute flavour addition?

This is on the boil now.

ADM: no 15 min addition as I'm using Si's hopping schedule again. See the hophead III post. If you like hoppy beers I can vouch it's a cracker of a schedule.

I was under the impression that the steep and switch off wouldn't impart much hop flavour and only aroma? Is this what you're going for? Can smell the hops from here...delicious.

Ended up with 45l @ 1046, must calibrate the brewery again methinks

Down to 1015 after 48 hours.

Went for a 50/50 mix of notts and SO4 and it burned through the sugar.

Looking good :-)

Kegged this last night, still a bit cloudy, probably mixing the yeasts and/or the torrified wheat.

Any how was getting worried about this one as the samples were not that nice, I thought it was maybe too much crystal.

I dropped it down to 10c on day 6 as it had held steady gravity wise for a couple of days and left it. it ended up at 1014, prolly due to accidently mashing at 68c rather than 67 (must get my herms finished).

Last night I took a half pint between kegs and oooooooh!.

Initially it's crystal, and SO4 then tick tick booooom! Cascades & NS.

SYMBO said "Mmmmm thats nice, oh, um oh Pink Grapefruit?!?!" :D

It's got two weeks in the keg till the Christening.
