Got this mashing at the mo, mash ph was way off with all those unmalted cereals, had to add some phosphoric acid to bring it into the range. Spices are 100g of citrus zest, 30g coriander seed, and about a couple of grams of chamomile

Tasted one of these last week that had 2 cardamon pods in with 2 tablespoons of marmalade and the coriander seeds.
Very nice indeed.
Have to add this to the "brew to do" list.

Is this the first time you have added chamomile? Let us know how the chamomile affects the final brew will you? Ta!

Cheers guys, the brew worked out well. Forgot the oat husks, whoops - lucky I have a pump. The mash basically set into one big bowl of porridge when I was sparging it - in retrospect I should have batch sparged.
Nah, i've used it the last two times. Try chamomile tea and you'll know how it tastes, like Juicy Fruit gum basically. Don't use too much!

Its rumoured to be a small addition in hoegardden. What do you reckon, judging by your tastings so far?

If it is, it is so subtle as to be virtually non-existent, the overwhelming aroma from hoegaarden (when it is fresh) is the orange and coriander. It is basically the beer I am trying to copy when I brew these.

Dusting off the first keg of this, tasty stuff. Decided i'm going to dump the oats next time or at least reduce them down to a couple of percent. I'm really going for a straight hoegaarden clone and theres no oatey taste in that. There is a background oat flavour in this which i'm not really in to. The Styrians add a nice extra citrus dimension.
Might ditch the WLP400 in favour of T-58 too, the White Labs is a PITA, requires more rousing than any yeast i've tried.

Have you used the t-58 before? What did you think of it?

Aye i've used it in a witbier before. It dries the beer out and it's quite spicy. A bit more neutral than the white labs wit yeast. Overall it's a good choice.
