christmas additions...

Hi all wanted some info on what i class as christmas additions.

my last post asked for help with a christmas brew so what i want to know is if i was to dabble with cinnamon sticks,star anise ,spice,ginger.........if any of these were added to a kit brew would they be boiled to extract or would they be added to the fv to produce there flavours.

You could try what I've done - which is to soak the spices in alcohol (rum in my case) for a while and then add to the beer later.

I can't tell you how it will work out, but I've just had a shot of the rum which has been sitting for a week - and it tastes dead Christmassy!
