Good man, it's always fun to experiment, it sounds like you developed a pretty neat drink. I have not tried spicing a Dubbel but I did add raisins to mine and they do come through in the flavor (in a nice way, not over powering at all). Rather than use molasses, I got some of that dark Belgian liquid candi sugar (and it is expensive as hell by the way). I wanted mine to taste like plumbs/raisens/rum and I am pretty happy with the last iteration. While you are trying to figure out how much of the rum/spice elixir to add to the beer, be careful not to make the beer taste too hot with all the alcholol. Also, if you decide you just have to mess with vanilla, be careful. I once added vanilla and cinnamon to a brown ale and I swear it tasted like liquid apple pie. Now, I like apple pie but in a beer, not so much.
Drinking:Saison (in bottles), Belgian Dubbel (in bottles), Oud Bruin (in bottles), Olde Ale (in bottles),
Abbey Triple (in bottles), Munich Helles, Best Bitter (TT Landlord clone), English IPA
Conditioning: Traditional bock bier, CAP
Fermenting: Munich Dunkel
Next up: Bitter (London Pride like), ESB
So many beers to make, so little time (and cold storage space)
