Today its brewday, 23Lt of a hoptastic ale for this summer:
Dr Whoover
MO 7000

Chall (90) (6.4) 47g
Prog (90) (6.0) 50g
Fugg (60) (3.9) 50g
Styrians (15) (3.5) 15g
SO4 x1
Protofloc

Got the mash on at 0830, its nearly at the top of my brupaks mash tun, sparging could be quite messy! This should come out about 7%, it will need to sit in bottles until at least June. Its a hoppy bugger is'nt it. I still have'nt worked out how to do pics on here but I will take some this time and try to work it out tonight.
Do you think I would be advised to pitch an extra 11g of yeast with this? How long before the beer is drinkable?

I make that about 1068, and somewhere around 80-90IBU, so we're into IPA territory here 8) I reckon age for 6 months, maybe 9? It should be less bitter and down to drinkable levels after 3 I guess, but the extra time gives time for the flavours to meld together nicely :D

I'd pitch 2 packets of S-04 for this one, and use a container with a good amount of headpsace....

hmmmmm.... I think I must have mis-weighed the grain.....SG of 1085! I have followed your advice and allowed plenty of headroom by splitting it between two fermenters, pitched 2x 11g SO5. I reactivated he yeast with some malt extract and gradually added the beer to it. Just put my nose near the fermenter and was nearly knocked over by the smell of it! Superb!
Rather annoyingly I was distracted all day by family so have'nt managed pics but plan a stout asap so will try for that.
Once again thanks for all the advice over the past year, beer is certainly better brewed yourself. Really THANKS!
I've just bottled 38 pints of 'hedgebadger' my elderflower ale, smells lovely too, a sneaky taste reveals a malty elderflower summer taste, bet it does'nt last til March!
Now stout. i have Maris Otter, Flaked Barley, Roast Barley , Wheat (torrified and malt), black, chcolate and crystal. Any suggestions for a smooth bottled stout thats not too strong alcohol (say 5%)?
I have GW's excellent book.....the sarah hughes has been nibbling at the edges recently wanting a brew, but whats recommended?

May need a little longer to mature then - definitely try and give it 6 months as it's gonna be somewhere in the region of 8-9%...

When you use US05 (or any dried yeast really), you generally don't need to rehydrate with malt extract as it's produced with all the nutrients it needs locked into the yeast cells - sterile water will work just fine (saves a bit of faffing around).

If you're looking for a good stout, you could do worse than trying Four Shades of Stout which is a forum favourite, though you're short the amber mal - adm did one called "Black Dog Stout" which a few others have done and reported great beer!

Funny though, (to my favour that fun) .


the grav dropped very suddenly. not the usual sparge, it was 1040s for a litre in, then 1009 in three moves but the mash was perhaps a little warm to start...who knows?
not me





still almost had me on the flooor when i inhaled the buggers earlier, jeez theres people on here who'd worship THAT smell as a god.
