Not sure which yeast to use with this one. I have the following choices:
Nottingham (never used it before)
S-04 (never used before)
Muntons Premium Gold

Anyone got any thoughts on this? :?

Never tried a mild so this is a first for me. This is made using up the grain & hops that I have left so it may not exactly fit the bill for a mild! :oops:

Brew Length 18l

OG 1.034

Pale Malt MO 2120g
Crystal Malt 220g
Black Malt 250g
Fuggles 20g 90 mins
Goldings 10g 90 mins
Challenger 10g 90 mins
Goldings 10g 15 mins
Irish Moss 6g 15 mins

Just mashed in and got the temp at 68.1c (I was aiming for 68c so can't complain there!) Only concern is having such a small amount of grain in such a large mash tun that it may lose a bit of temp?

Any comments on the recipe will be most welcome; I have no idea about recipe formulation so it may be a completely different beer to what I was aiming for! :oops:

Mash over and it's now boiling happily away! :D

Running the first batch off for recirculating. Looks a lot lighter than I was expecting!

Running off after recirculating about 4 litres; nice and clear.

Boil under way, first hops added and one element turned off.

It looked a lot darker once all the wort had been collected' 25 litres in the boiler so with loses may be nearer 20l :oops:

Boil over and the chiller is in the boiler. Left it in a little too long and temp' down to 18c in 12 minutes :oops:

S-04 would have been the better of the two yeasts for a mild.

Just realised why it's not as dark as I wanted; I only put 25g of black malt in it! #-o What an idiot! It even says 250g in my notes! #-o #-o #-o

Just checked the SG and it is 1.008 so have transfered into secondary FV, Planning to leave it there until the weekend and then drop it into a polypin and, hopefully start drinking it a week after that. Had sneaky taste and was very impressed. This is the first beer I have made at a lower gravity (OG 1.034) so didn't know how it would turn out. Very clear and full of flavour and nice and hoppy too; sorry not very good at taste descriptions! :oops:

Based on your recipe your EBU will be 42 which almost twice what you'd find in a mild. What you've made is probably more of a porter but I'm sure it will still taste nice. I'd give it at least 4 weeks to mature.

Really? I must have got my calculations way off then :oops: I was aiming for an EBU of around 28! Mind you it's doesn't taste very bitter but has some nice hop flavour and aromas. I'll let you know how it tastse in a few weeks. :D
