Not Very Pale - 15th May

Post by coatesg » Sat May 15, 2010 11:37 pm

Am just doing this one tonight - it was supposed to be a strongish pale ale, but I think it's gonna be a little darker than I first envisaged with the amber and the dark crystal #-o (OK - it's pale in as much that it's not a very dark...).

5kg Cocktail pale malt
240g Amber (~60EBC)
240g Dark crystal malt 240EBC
70g Light Crystal malt 60EBC

75min:
Pilgrim 9.4% 30g
30min:
Fuggles 3.8% 24g
Goldngs 4.6% 18g
15min
Challenger 6.4% 14g
Fuggles 3.8% 14g
Goldings unknown% 14g (homegrown 2009 crop)
0min
Fuggles 10g
Goldings 7g
Cascade 10g

Yeast will be Edinburgh Ale WLP028
OG somewhere around 1054, IBU somewhere around 50 or so.

Slight overshoot - 21-22L @1057, but not worried about diluting back. All done before 1am too which was a little unexpected!

EDIT: I dropped another litre and a bit of pre-boiled water into the FV this morning thus diluting it back to 1054 or so.

Its not 'too' dark... but surely fairly dark!! :D
I'd rather be brewing than decorating today! :(

Sod the fact that it's not particularly pale - it currently has marvellous flavour! Dry and biscuity, a fair bit of something smoky and roasty (yeast contribution and amber malt I think). Hmm.
