Afternoon All, had much fun today with the new 60L Boiler fabricated from the instructions of your good selves. No pictures Im afraid as completely forgot, being somewhat immersed in the action ( mild fear of my new boiler doing something disfiguring or semi fatal). Suffice to say that it worked perfectly, boiled quickly and did not block.
The recipe for today was as follows. Any opinions as to the outcome gratefully received.
13 lb Marris Otter
5 oz Crystal Malt
2 oz Wheat Malt
4 oz Cara Malt
10 grams DLS
1 1/2 Hr Mash
1/2 oz Amarillo (To finish off leftovers)
1 1/2 oz Chinook
1 1/2 oz Simco
1 1/2 oz Cascade
All 90 Min Boil
1 1/2 oz Chinook last 10 mins of boil
1 1/2 oz Simco as above
Whilst Cooling
1/2 oz Chinook
2 1/2 oz Simco
Safbrew T58
OG 1044 @ 25 L (ish)
What do you all reckon?

Looks good T-58 is a slightly odd choice of yeast though. Why did you pick it?

Apparently it has an unusually high ester profile with some pepperyness? Just what I read somewhere. If true it may go well, if not there are probably enough hops to destroy all other flavours! I like to experiment, doesn't always go well but such is life.

Indeed. Although as far as I remeber T-58 might strip away hop flavours, is what I was getting at.
