Jims Summer Supper v2

Post by Birdman » Sun Aug 22, 2010 8:49 pm

Brewed this about a month ago and it was perfect for me. So have done my first ever rebrew...

Jims Summer Supper v2 (American Pale Ale)

Original Gravity (OG): 1.045 (°P): 11.2
Colour (SRM): 10.5 (EBC): 20.7
Bitterness (IBU): 42.1 (Average)

64.07% Maris Otter Malt
30.82% Lager Malt
5.1% Crystal 20

0.7 g/L Amarillo (9.5% Alpha) @ 20 Minutes (Boil)
0.7 g/L Centennial (11.7% Alpha) @ 20 Minutes (Boil)
1.3 g/L Amarillo (9.5% Alpha) @ 10 Minutes (Boil)
1.3 g/L Centennial (11.7% Alpha) @ 10 Minutes (Boil)
1.3 g/L Amarillo (9.5% Alpha) @ 0 Minutes (Aroma)
1.4 g/L Amarillo (8.6% Alpha) @ 0 Minutes (Dry Hop)
1.3 g/L Centennial (11.7% Alpha) @ 0 Minutes (Aroma)
1.4 g/L Centennial (9.7% Alpha) @ 0 Minutes (Dry Hop)

0.1 g/L Whirlfloc Tablet @ 15 Minutes (Boil)

Single step Infusion at 67°C for 90 Minutes. Boil for 90 Minutes

Fermented at 20°C with Safale US-05

Notes: Brewday - 22/08/2010

Version 2 as Version 1 disappeared so quickly!

Strike Water = 11.2L @ 74-75oC

Mashed in and temp = 66-68oC across the mash. Mash went on at 1:50pm

First runnings 1.090 @ 28oC

Final sparge runnings = 1.010 @35oC

Absolutely full kettle as oversparged to get some wort for making starters. Took off about 2 litres of pre-boil wort to boil (concentrate) and make up a starter for next brew

Pre-Boil gravity = 1.032 @38oC

Added FO hops and started to chill. Chiller leaked about 3 or 4 times. Too much pressure from the flow to keep hosing on (really should buy some jubilee clips!)

Defo got some water into the kettle. Very worrying as I chill from an outside tap that I only ever use to rinse things pre-boil that don't matter and when cleaning things up afterwards...

Finished up with about 21.5L @ 1.042 so didn't get the 75% efficiency I was hoping for. Hardly surprising as I didn't do any water treatment (other than a campden tab) as currently have no Gypsum. Hopefully it will be as good as version 1 as there are only about 5 bottles left. It was really drinkable after 2 weeks in the bottle with an amazing fruity nose. Early doors it was a bit spicy from all the dry hop amarillo but that died down a couple of weeks ago and now its just smooth liquid gold. I've never managed to make another beer with so much hop aroma in it.

Looks like a cracker! Might have to brew something like this for the wife.

Sounds good :) did you change anything from the previous brew?

Just the OG. Didn't have as much lager malt and wanted to keep the percentages the same. Wish I'd bumped it up now as its gonna be about 0.7% lower ABV. This was the first sub 6% beer I've made, and it happened to turn out the best of anything else. So wanted to keep it as close as possible, so everything else was the same.

I can pretty much guarantee it will be nothing like the first!
