Todays Brew GW London Pride

Im originally from London and I miss a draught pint of Pride. So I thought, as I have the exact ingredients for Graham's London Pride I'd make a batch. I've made it a few times and it always turns out great. But I’ve never had the correct hops in my stock. Adjusted the hop AA's and tweaked a little in Beer engine to match the EBU. Just about to start to sparge and it smells wonderful. :lol:

Pride is one of my favourites. I made a batch up a couple of weeks ago (10 gallon) and bottled it today, but didn't have any Target hops, so used Amarillo.
We'll see how it turns out! [-o<

What hops did you use?

Hi HH
I used Target, Challenger, Northdown & Goldings. Got great mash efficiency. Ended with 27L @ 1043. used a Brulab TV3 yeast. The wort was very bright and clear But was a nice dark colour. hoping for a good brew here.

It's a crackin pint. I used windsor for 5 gallon and recovered worthies white shield yeast for the other 5 gallon. I've bottled 15 gallon today in total, 120 pints. My hands are like wrinkled prunes.

Never used Thames Valley 3. What's it like?

Now theres dedication, 120 pints bottled in one day. I've been tempted to recover White Sheild yeast, How many bottles do you need to get enough for a 25l batch. I've been using Brulab Thames Valley 3 for the last few months, The same slope of yeast made up then split between 8 small pet bottles and refridgerated. I like to wake it up a few days before Im gonna brew. I tip away the used wort from the pet bottle and add some of the 1st runnings to the yeast. By the time the wort is in the FV the yeast is looking good. TV3 is the first non dried yeast I've used. I intend staying with Brulabs yeast for a while. They work out great value and its nice to see the yeast working before your need to pitch. I do have a few S04 in the fridge as a back up tho.

Usually the dregs from 2 bottles is enough. I usually start with 1/2 pint of wort in a sterilised milk bottle. 3-4 days later when there's a decent white band at the bottom of the bottle, I pitch it in to a sanitised demi-john with 2-3 litres of wort (I use jars of H&B malt extract for starters which seems to work quite well). Another 3-4 days later it's ready to pitch. Taste test on this beer to check for vinegar taste or off smells, but I pour the dodgy beer off the top (as it's high bitterness to keep the bugs out) and mix in cooled preboiled water to get it off the bottom and pitch this in to 23-25L. This usually gets off to a roaring start, trying to escape from the fv. I use half the trub from each brew for the next 3-4 batches. When I transfer to secondary I make another brew on the same day.

I used to have SO4 in the fridge in case of emergency, but I'm getting nicer beers off windsor (also dried). How does TV3 perform, i.e. floculation, attenuation and most importantly flavour?

It is similar to S04, the trub does not settle quite as firm but it does drop well. Not sure of the attenuation but I have always fermented down to around 1012 so im guessing it will be about 70-75%. Most of my brews are bitters. The flavour of TV3 works well with them, I've also been experimenting with sorting my water treatment out, so some of my finding may be partly to do with this too.
