"Amber Alliance" Steam Lager ?

Post by Kp2 » Wed Nov 24, 2010 4:22 pm

Right not sure whats happened here but I've run out of beer  . So I made a bit of time last night or so I thought.

The the wife had the day off. So I thought I would get her to put the water on for me. Saving a fair few hours. Well that was a non starter, not a chance. Closely followed by getting home late from work. The end result was 2:00am finsh. Back up at 6:30am to finsh it off. I had to leave the wort filtering for the remainder of the night (4.5hr  ). Then a hour treck to work for 8:00am. Think I am going for a nap in the car after this.

Anyway, I was looking to make an Amber coloured lager, but I needed it to be quick due to stock levels. So i desided to go the "Steam Lager" route. And this is what I understand of the process. If i am wrong feel free to jump in. Or just cyber spank me :=P .

Quite simple put, Steam beer is a method use in the USA. The idea is to make your lager / beer as per using lager yeast and run it at a higher than normal temp (21-24c) rather than (10-15c). They just can wait can they...(But nore can I). I have tried this before and got a good clean lager from it. You do end up with a slight cross over to lager / beer but it's still nice. The yeast I am using is a Belgium Pills which I keep on agar slops at 4c. It clean, crisp and seems to perform well at higher temperture.

Here the grain list and stuff.

22L at 1.060 = 7% ? 90 mash 67c (bit hight but should give a drier finish)

Lager 68.0
Pale 10.0
Amber 20.0
Munich 2.0

Styrian 3.5 60.00% 27.06g 90min
Saaz 2.1 30.00% 13.53g 30min
Saaz 2.1 10.00% 4.51g 5min

I've still need to re-rack, (I like to do a second racking before Primary fermentation), and add the yeast (small starter of 80ml from the warm wort). Finally do the washing up. My only worry is the amber malt was a bit on fine crush side for me and may be a little harsh with so much in grain bill. I will post pic once I find the camera. :D Ace more beer, don't mind not sleeping really. Not if I am creating a beer. =D> =D> .

Interesting Kp2, I've heard about steam beers before, keep us updated on this.
I'm a bit similar on the low stock and need to get a few quick brews done, but midweek after work, I dont think so;)

Fingues cross I'll have me new SS brew unit up and runing early next year. Should help cut back on the late nights, unless I testing at the same time

Again the steam beer info has come from this book "Designing Great beer". Gives a bit on history and tec info. Another name for steam beer is California common (best know beer is Anchor), should give a good starting point rather than me just stating ramdom part facts.
