Finally got round to brewing this Munich Dunkel. Thanks for all the advice!

3.20 Kg MO malt
1.40 Kg Munich
0.30 Kg Vienna
0.10 Kg Carafa special III
0.10 Kg Torrefied wheat
0.10 Kg Carapils


Brew length 23 L
Colour 65 EBC
Bitterness 23 IBU target
50g Tettnanger At start of 60 min boil
14g Tettnanger At 20 min from end of boil
Yeast : WLP833 82g of yeast cake from a 4L starter
Yeast pitched @ 10C
1056 OG
Target 1012 FG (5.8% ABV)

I realised at the last minute that I'd ran out of pilsner malt so I've had to go with marris otter. I'm sure I've heard them say on the Jamil show that you can get away with MO in darker lagers because it adds a biscuity note. Anyway that's what I've got. I also didn't have enough munich so substituted some vienna. Need to stock up on almost everything!

Shot for 65EBC which was darker than the style guide lines for colour but it's come out a nice dark brown, lighter than I expected. Torrefied wheat and Carapils added for head retention. Aimed for 1054 so happy with a couple of points higher at 1056.

I used WLP833 Bock yeast and stepped up a 4L starter on a stir plate. It was 6 weeks passed it's sell by date but worked fine. Left it to ferment for a week at 21C, then crash cooled for 48 hours and ended up with 82g of yeast cake. Pitched at 7pm last night and there's a nice foamy head on it this morning at 7am, so well happy with that. I was a bit worried I might not have had enough yeast.

Smooth brewday considering I pulled the ligaments in my knee playing football on Thursday night and i'm still hobling around now!
Should have called this one Hoblin Goblin!
