Oxygen is needed in the wort before pitching the yeast, but once the initial phase of fermentation is over it causes the beer to go off.

There is a school of thought that allowing hot wort to contact the air during mashing/ sparging/ boiling causes hot side airation. Many people (me included) think this is complete bollocks.
Which came as huge releif to me as I brewed many extract brews and allowed hot (>60C) to splash about a bit prior to cooling...

The beer turned out fine though but I was convinced I'd commited some Breweing capital crime! :lol:

Brew day looks good and I hope not too many of Georges black hairs (Had black lab myself years ago and her hair ended up everywhere - but such a grand dog) ended up in your lovely looking IPA!
