Idle? yes, I couldn't be bothered to get the correct malts for a wheat beer, so have brewed from what is in store...

2000g Wheat Malt (54.1%)
1600g Pale Malt (43.2%)
100g Crystal Malt (2.7%)

44g Hallertauer Hersbrucker @ 60 mins

Recovered Schneiderweisse yeast at 18C

Final Volume: 19 Litres
Original Gravity: 1.044
Final Gravity: 1.010
Alcohol Content: 4.4% ABV
Total Liquor: 28.8 Litres
Mash Liquor: 9.3 Litres
Mash Efficiency: 75%
Bitterness: 17 EBU
Colour: 11 EBC

I am hoping to produce a light wheat beer for drinking in the sun.

The efficiency was a little disappointing at about 68%, so I ended up with OG 1041 instead of the target 1044. I was expecting the wheat to have a lower efficiency, but not this low.

I lost about a pint on the floor as I forgot to check the boiler tap - but washing the kitchen floor will get me points with SWMBO.

I cooled the wort right down to 18C (it is 20C here today) and pitched most of the starter. I have turned the central heating off, so the brewery should cool down tonight.

I kept some starter back and topped up with wort to bulk up the yeast - this will give me 2 more starters for the fridge.

I'm going to bottle this beer, but am not sure how much conditioning sugar I need for a wheat beer. I was thinking about 90g in 18L (5g per L) to get a decent fizz.

Bloody weather! 8:30am and 24C in the brewery :evil: doors and windows open to try and cool it down.

It has got no head!

I opened a bottle last night - there was good carbonation, but what little head was formed died immediately - most disappointing!

I would have thought all the wheat would have given good head retention. The glass had been hand washed with a little fairy liquid and hand polished. What have I done wrong?
