Today I did this

Grains:
4 Kg Golden Promise Malt
150gms Roast Wheat
150gms Torry Wheat


Hops:

20gms Citra 13.8% AA @ 60min
30gms Citra 13.8% AA @ 15min
50gms Citra 13.8% AA @ FO

RIMS:
15mins @ 40º
15mins @ 50º
60mins @ 65º

Yeast:
Liquid Ridleys

23ltrs of 1040 in th FV :D

Colour is just short of a chestnut, hoping to fool the brain into thinking its not a pale beer with the roast wheat.

The Ridleys yeast, is that the Whitelabs Essex.

I got it from Crouch Vale as I understand its WL ESSEX

Intresting, I was at Wibblers brewery at the weekend and some of the other people there were telling me he uses the old Bass strain, a few years ago I'm sure Phil told me he got his yeast from Crouch Vale but maybe things have changed. Next time you go to Cruoch Vale it might be worth asking. I always thought it was the Ridleys strain as well.

Crouch Vale did indeed get their yeast from Ridleys, many many years ago. I have a mate who worked at Ridleys at the time.

update on this, it has a great Minty aroma and not a ( Very fruity Citrus, peach, apricot, passion fruit, grapefruit, lime, melon, gooseberry, lychee fruit, pineapple, mango, papaya and other tropical fruit flavors ) zest to it, Roast Wheat is there but not full on,think im serving it too cold at the moment but good drop of very easy drinking Juice.

I love the fact that its a Dark chestnut that makes you think its not going to be a fresh light drink :)
