Beer for the summer (Haf Wit)

Post by Cheshire-cheese » Mon Apr 25, 2011 1:21 pm

It's about time I got another all grain beer on the go. I've been tinkering with kits and extract lately.
I was planning a lager but have no lager yeast at home. I have a wheat beer yeast but only enough wheat for less than a quarter of the grain bill. Whatever the beer could be classed as, I hope it will turn out well for the summer.

To make 24 litres, aiming for 5%abv

For the 90 minute Mash
3 kg Lager malt
500g Wheat malt
400g Torrefied wheat
100g Malted oats
2.5ml lactic acid 80%

For 90 minutes of the boil
30g Saaz hop flowers (3.3% alpha acids)
For the last 15 minutes of the boil
50g Hallertauer Hersbrucker hop flowers (3% alpha acids)
20g crushed Indian coriander seed
25g chopped fresh, sweet orange peel

To ferment at 20 to 22 degrees C
Brewferm Blanche yeast

Should be interesting with the lactic acid addition. Is that to add a little sourness or up acidity?
Should end up a nice summer brew, although I'd up the wheat if you have anymore.

That looks just the job, down to my last four pints of a wheat so need to get brewing. I found the WB06 quite good for a dried yeast, the munich yeast tasted metallic. Must get a 'wet' for my whetas. Best of luck!

To up the acidity of such a pale grain bill. It should have been checked with pH strips, but I've mislaid them #-o

Perhaps a bit early to go naming a beer, but as it's not exactly a wit bier and it's one for the summer (haf in Welsh) I'm calling it Haf Wit.

OO, well reminded, I put some in the fridge earlier... *goes to fridge*

Bit of Sulphur on the nose but nothing I'm bothered about, I'm fairly happy with it, though I'll better know when its a bit older.
