Brewed Yesterday

Recipe based on Palmers Victory And Chaos Pale Ale;

3kg Brupacs pale malt extract
0.5kg Muntons light spray malt
0.25kg Crystal malt

25g Target 11.3%aa for 60 min
50g EK Goldings 5% for last 15 min
50g Liberty 4.6% at end of boil

OG 1065

Pitched a starter made up from some Theakstons yeast I managed to aquire.

All went swimmingly until I tried to aerate using my brand new air pump purchased from hopshop. I could not get the air stone to sink in the wort, it just floated on the surface! Gave up, put the stopper in the top of the fermenter (better bottle) and shook the bejesus out of it.

Dry lock air trap started slowly venting after about 5 hours, so far so good. However this morning I have had to hastily fit a blow off tube arrangement after a foam escape.

It is now fermenting like a maniac :twisted: and I am going to have to open all the doors to allow the CO2 to dissipate :=P

This will be about my 4th extract and I am hoping for a decent FG after the previous 3 all finished high (about 1018 from 1044ish).

good tip re the 10mm copper pipe

this evening the bubbling has slowed dramatically but there is still plenty action in the fermenter (particles/bubbles with the rising and the falling, oh and the swirling around).

I take it by rousing you mean a gentle stir? I wonder if this has been my problem in the past with high FGs.

Brew has now fermented down to 1016 (OG1065), giving a current estimated abv of 6.3!

Trouble is it is still bubling a little and has not even started to clear , so i am begining to think there must be some kind of wild yeast infection.

How long can I feasably leave it in primary to see if it clears?

1016 is not unduly low for a beer with that OG.

Trouble is I dont really have a suitable secondary fermenter. :-k
