POP's Stout

Post by Wez » Sat Jul 07, 2007 9:46 am

I want to have a go at a stout having only brewed pale ale's and bitter's so farPOP's Stout looks like a winner so i'm going to go with that one :D

The original recipie looked a little strong for me  (23L OG 1074 65% eff) so i've adjusted the grain and hop bill to hopefully end up with a 5.5% ish Stout.

I am working to:

75% Efficiency
25L Brewlength
Target OG 1056
EBU 56

Could the guys on here who brew Stouts regularly have a look over this and offer any suggested alterations before I order my grains up. Also what would be the best yeast to use.

4075gm Pale Malt Grain 62.2 %
815gm Crystal Malt Grain 12.4 %
405gm Barley, Flaked Grain 6.2 %
405gm Carafoam Grain 6.2 %
405gm Roasted Barley Grain 6.2 %
245gm Black (Patent) Malt Grain 3.7 %
200gm Chocolate Malt Grain 3.1 %
93gm Northdown [6.50%] (60 min) 56.1 IBU

90 min 68 degree mash
60 min boil

Cheers guy's.

I've gone with Mysterio suggestion of 1 IBU per OG 1056 = 56 IBU, is that not right?

8) Cheers DaaB

The other problem I have is mash tun size, not sure if I'd get POP's grain bill in my coolbox mash tun. :? I guess I could scale it down to a shorter brewlength (say 15L) then dilute down to the OG I want? Does that sound about right?

Cheers, I think thats what I did and then scaled up from POP's 23L to the 25L that i normally work to. I'll have another look at it when I get back fromm feeding the ducks... (quack!)

I have no idea how to scale recipes for different ABV. DaaB's advice is as sound as usual so I would go with what he suggests :)

I'd try and use White Labs WLP004 (Irish Stout) if you can. Otherwise your favourite dry yeast will probably be suitable.

Enjoy :D

Cheers guys looking forward to doing this one, i'll take some pics. Do you normally get a more active fermentation with dark beers? Climbing out of the FV type krausens?

Wez - beersmith has a recipe scaling function.
I seem to recall that you have BS

Cheers iowalad, Yep I have, I used it today to work this out. I took POP's recipe and reduced it by 25% then used BS scaler to scale from 23L to 25L and did a little rounding to get 'nice looking' numbers  , pretty sure it's going to work out OK.

I do this with most recipes. I ALWAYS try and use rounded numbers - Saves on having small amounts of grain lying around!

I could have rounded a bit more, i've still got some 5's in there 405 will probably become 400 on brewday, i Just wanted it 'as is' in beersmith so I could see the exact target OG etc. I'll let you know how I get on with it, it certainly seems to be held in high regard, I hope I do it justice 8)

I adjusted the alcohol on this one simply by keeping the same grain bill and adjusting the pale malt, I figure that you want to keep the same flavour just with less alcohol.
Just come out of the primary & tastes excellent btw POP :)
