Frothy Weisse mk2 - one of those days

Mk1 turned out just grand and so with some slight modifications to up the cloudyness I'm going for a 50:50 grain schedule. The decision is to turn the coriander down a little as the flavour was a little overpowering on the hops when I think the hopping was about right. This time we're onto Hallertauer Mittelfruh another low AA flavoursome hop.

Grain Bill 23L 1.050 @75%eff'
3kg Wheat Malt
3kg Pale Malt

Hop Schedule 14.24IBU
Hallertauer Mittelfruh 3.8% 25g 60minutes
Hallertauer Mittelfruh 3.8% 25g 15minutes
15min - 23g Coriander seeds crushed

Safbrew T-58 11g

I hadn't got quite enough Pale Malt so I went to grab 600g from a new 25kg sack of lager malt..... whereupon I've managed to topple a 1L jug of water into the brand new sack :cry: In a rush effort I've taken out as much of the wet malt as I can and 5kg is currently being mashed in a spare cool box for some last minute lager 19L @1.050. The hope is to tranfer it to the mash tun for the sparge once the first mash is over. Probably use some N.Brewer bittering hops and the remnance of the H.Mittelfruh for aroma/ flavour.

Grain Bill 19L @1.050 75%eff
5.2kg Lager Malt

Hop Schedule 25IBU
60min - 13.16g Hallertauer Northern brewer 8.5% (13.6IBU)
15min - 50.00g Hallertauer Mittelfrau 3.5% (11.4IBU)
15min - 5.00g Irish moss

Saflager - 11g
11oc primary
4oc secondary


The second batch is currently sparging from the mash tun and it's looking pretty cloudy - I guess from some left over wheat proteins. The first boil is nearly through, the hot break was a monster again (due to the wheat malt?) and I'm just about to add the 15minute addition of coriander etc. Regarding the hop schedule in the lager I enjoyed the heavy late hops in a recent pilsner urquell clone so I'm using up the remaining 50g of H.mittel and worked backwards how much N.brew to get 25IBU's. This way of thinking regarding the hop additions is something I've only started the last few brews and it's given the best results for me yet.

approx 4pm - 10pm so the combined brews took just an hour or so longer than usual. End result-
23L Weisse @ 1.052
19L Lager @ 1.054

Not a bad sunday all in all after a shaky start :)I just hope that the rest of that lager malt is going to be ok.

Well recovered Frothy. :) Regarding the late hopping schedule, nice one. I personally feel a lot of homebrewers are quite timid with hops - wether this comes down from recipes that say 'add 6g at 15 minutes' etc, I don't know. But I like a good smack of hops where appropriate and think nothing of bunging in 2 oz late, or 10oz for a real IPA, etc.

The other thing is I feel 15 minutes is too long a boil for hop aroma/flavour...you're boiling it off!! What on earth is the point? 1 minute max, at switch off, when the wort has cooled a bit, or dry hops, will give better results.

Cheers Steve. I find the hops make or break my beers and I've followed a lot of recipes that haven't given me the flavour and aroma that they did the author so at first I thought I was doing something wrong, now I get the results by upping the late hops. I'm getting good results from the 15minute addition, those hop flavours are really distinguishing from the commercial brews. The CAMRA Euro beers book has some shocking hop schedules in it, accordingly most beers have the full hop addition at the start of the 90min boil and not much thereafter.

Well, a lot of European beers don't emphasise the hop in the way many British ales do, so I can quite believe a single addition.
