The point is that it doesn't whip it up - when you pull on the syringe the gas comes out of suspension in the beer inside the syringe... when you push that back into the pint it rises up exactly like the tight creamy head you get on a freshly pulled pint. It makes no detectable difference to the gassiness of the beer because it uses such a small portion of the pint to create the head. Aah, now I understand. You only 'syringe' a small amount of the pint. Fair enough.
Of course, where I live (near London), a solid creamy head on a pint isn't really sought after!

Considering that my eSB didn't really go as planned, and has only had 8 days in the bottle, it has turned out to be a cracking beer. Maybe still slightly bitter, but the bitterness isn't astringent at all. I'd liken this to more of an APA, especially with the nice light citrus hit that lingers on your tongue.

Surprisingly really pleased with this one.

Well I've finally bottled my slow fermenting ESB. finished at 1.011 so not too bad. Tastes amazing even when it's flat so once it's got a little life it'll be even better. The temp has been on the low side the entire time which of why it's taken so long.

Certainly looks the part Matey, shame that it hasn't turned out how you wanted though
My brew was a bit of a disaster too, after seriously missing my OG and ending up with too many IBU'S, it tasted quite good from the bottle in the first month, but has gradually conditioned into a much lesser beer and has retained the high bitterness.
I will definitely brew it again at some point this year, and try and do it properly this time!

Funnily enough, mine has improved over the last few weeks. Initially the bitterness (caused by me cocking up the hop schedule) was a bit much, but it's mellowed out a bit now. Also, there's a quite unique and pleasant dryness on the back of the throat from the charcoal-dried hops I used (courtesy of A Bushel of Hops). Unfortunately, they're all gone until next harvest.
Of course it could also be that I've got used to it.

My brew did sit in primary for quite a while before I bottled it, so I wonder if this hasn't helped with it's premature ageing. It's almost got a kit twang to it now
Not sure if I can participate in the next brewalong, as I'm finally brewing a Smoked Porter next weekend, and then I am going to concentrate on brewing an APA for a local competition in April, which I plan to brew twice, back to back in case it needs refining.
I will still look forward to watching the next JBK brewalong unfold

Mine is still tasting banging. Still nicely bitter and good hoppy flavours coming through. It's finally cleared too, no idea what I did wrong on that front.

Finally about to brew this tomorrow so very late to the party, however will be brewing the JKB Wee Bee at the same time so hopefully that evens it out a bit
