True, true. It was so late I just chilled to 25c in 45 minutes then transferred immediately. Ideally should have let the bed settle for a while. But I figured I would skim any dirty break over the US-05 after a couple of days anyway, and that it was definitely an improvement!

I found the little shot glass (pictured) earlier and the break had clumped and fallen in it to reveal a clear wort, so that's a good sign. The brew itself appears to have started fermenting away nicely so far. My last brew accelerated massively once I had skimmed it of the break trub and as a true top fermenting yeast I'm expecting similar benefits this time. (I know a skim isn't entirely necessary, and so have read around on the forum about skimming, dropping and US-05 to get some background).

Well this is only my second all-grain, but having read a bit about cold break on the forum recently, I would have preferred to cool it then go off and do something else for a while while it settled and made a nice hop bed to filter the break.

Not bothered though, I'm pleased with it how it is :)

That will be an absolute 'Summer Lightning' style beer! I brewed a very similar beer in Feb this year and its all gone now.....

Thanks very much for the feedback this evening. It's fermenting reasonably healthily and I can't wait until the head forms properly so I can skim the trub later this weekend. The last one went off like a rocket after that.

This will be my last brew for a short while as I've run out of keg capacity, so I want to make sure it's a good 'un.

A lot of the trub had floated to the top with the foamy yeast head, so today I skimmed what I could with a sanitised slotted spoon and got a good load in a saucepan. Seems a shame in a way to get rid of all that yeast, but a new cleaner head is already forming, a lot of that break material is now out of the brew having helped the yeasties get started and the airlock activity has increased dramatically.
