My hop stock is

Target, Pearle, EKG, Fuggles, Northdown, Aurora.

Can anyone recommend hop type and amount for this brew?

I would use Target. In fact it's what I usually use in stouts. About half the quantity ECR used, if you can't find the exact %AA or target IBU.

Hi,
By using the grain weights suggested, I can put in 20g of Target & 25g of Northdown to achieve 43.9 EBU's (according to Beersmith).
Would this be O.K?
I'm a novice at recipe formulation with Beersmith.

That would work fine, imo hop type are not particulary important in a stout, as long their bitterness balance the sweet malt out to varying degrees, basically anything goes.

A year ago or so I did a few batches of 'Pops Stout' which is an excellent recipe on here if you look, it's got a massive body to it, and the author Pop himself actually had Saaz in it which is traditionally a lager hop, it still worked great. I used Northdown on one occasion and a mixture of leftovers in another, both were cracking brews.
