The Bomber's going for a low level run.....


Down to 1012 (from 1050) already this morning! Still very cloudy. I'll give it a few more days and see where it goes.

Forgot to say......tastes great as well! Lovely and smooth already with a nice grapefruity tang already from the cascade.

I think this one will be fine for the 24th - especially if I fine it on the way into the keg.

So i've ordered some Kwik-Clear finings (2 part kieselsol and gelatine), so now how do I go about using it? Graham's earlier post says to add the kieselsol to the brew in the FV (presumably also stir, then stand for a while), then rack to keg and add the gelatin later??Then just leave to sit and serve a week or so later?

What happens to the goop that the finings take out of solutionm - do they just accumulate at the bottom of the corny (if so, I imagine some comes out in the first pint or so)

If you fine in the corny it will all appear in the first couple of pints unless you take 10ml off your dip tube, or make a 180 degree pipe for it.

If you've got a spare vessel, you could sanitize and keep it in there while the finings do their work.

This raises the nasty issue of force carbonation and CAMRA etc.

This thing's going like a train.....it's under 1010 now! For some reason I thought the US-05 would be slower that S04. Don't know why....

I'm off to the US until Friday so will take another reading on Saturday. If it's stable, I'll bang it into a corny and leave it to settle out.

Fine it with gelatin. I always use gelatin when I brew with 05. Your beer will be crystal clear in a week, probably less.

I've got some 2 part kieselsol and gelatin finings on the way - so that's what I will do!

Never used finings before - first time for everything.

Personally, i only ever use copper finings, but loads of guys on this forum use gelatine with good results. Heat up a pint of beer from the batch in a saucepan, mix in the gelatine powder, pitch into beer when cool.

As to kieselsol, i thnk that's intended for wine. It could be you've purchased a 2 part wine fining.

It is indeed a 2 part wine fining - but actually says "Wine & Beer Finings" - it's the Kwikclear one as mentioned by Graham (not Wheeler) recently.

I might just try the gelatine part, or give the whole lt a go - depends how good the instructions are and how bold I feel!

Hold on though - one point on the gelatine - if I mix it with hot beer, won't it make....well.....jelly????

Exactly. When you dilute it into the rest of the beer, it can't gel the whole lot. The gel forms on the particulate matter floating about in the brew then sinks.

Supposed to work for beer too - the kieselsol and gelatine attract oppositely charged particles (which is why you can't add them both at exactly the same time or they cancel out...). The keiselsol (an inorganic silicate) is the auxiliary fining that is added before stirring in the isinglass/gelatine.

So......I racked this one to secondary on Saturday morning and did the fining in the secondary. I didn't want to do it in the FV as it would shake up all the yeast, and i didn't want to do it in the keg as then I'd have all the shite in the bottom of that, so using s short term secondary seemed like a good idea.

10ml of the kieselsol solution, give it all a good shake around, wait 30 mins, 10ml of the gelatin solution, give it another good shake.

This morning, I stuck it into the corny, and it's looking great - really clear.

Now it gets until Sunday to carbonate. It's tasting pretty good now, hopefully will be even better by the weekend. I know it's still going to be too young, but that's what you get for not planning ahead enough!
