Safale US-05 in my APA now 4 days after pitching - getting more creamy and yeastie. Bubbles still going at 2 or 3 per minute but definitely slowing down. Depth of trub in the base of the FV is also about half of what it was so things are looking up!

Yep, that's a classic example of US-05. 8) It'll slow right down and the yeast will gradually drop through (although you won't notice this until you suddenly can see beer in breaks in the yeast cap). I personally wait until the yeast has all dropped before racking.

I couldn't hold out any longer and last night I cracked open the first bottle (after a week) and its tastes wonderful. Fantastic hoppy aroma, a nice bitterness with an immense, floral, hoppy flavour. It was so nice tht I popped open another 2 bottles! I have consigned the rest to the cellar today to avoid too much temptation as it probably should have about another 4 or 5 weeks to condition properly. :lol:
