Great stuff.

I should not bottle so quickly after I get stuff fermented 10 days is too short I end up with a lot of sediment.

How long does it take to carbonate the bottles?

Cheers PD! with 1066 SG, had to call it Conqueror, or Hastings, or something like that! Just cracked open a bottle (probably a bit prematurely) so apart from being a bit green.... tastes really nice.... I'm definately getting a caramel/toffee aftertaste, and residual sweetness. Think I'll have a better idea after a few more weeks conditioning

With this one, the Conqueror Toffee, it had been in the Primary for a week, in the secondary for 3 weeks, then bottled, and warm conditioned for a week, and it's just been sitting in the garage for a week.... Good carbonation already, bulk priming with 70g invert sugar.

I know what you mean about sediment! I really hate the crud that can build up in the bottom of bottles... it makes cleaning diffricult, and transportation really awkward.... and it's even worse giving bottles to neighbours/friends who don't know how to handle a proper bottle of beer :roll:

So on average 2 months from starting fermentation to drinking.... but certainly seems to improve with futher conditioning time.... patience is a virtue [-o<

Great post, any chance of a photo of the finished product poured in a glass?

I'm hope it looks as good as it sounds!

Wow, nice sounding beer and great label. I need to get into bottling\labelling again. I used to be so into that side of brewing before I got into corny kegs. What software did you use? Something purpose built or is it a combo of PS and MS Word?

Pretty much all Photoshop... it's a really early version, but it's taken me ages to figure out how to use it. so in no hurry to upgrade :) Export the PSDs to JPGs and import into Visio with 3 to a page. I've gotta admit bottling is a bit laborius, but has resulted in a lot of beer in rotation, and it's great to see the effect a bit of ageing has!

I've just cracked open a bottle myself and taken the following pic... Yep Floyd, it's either your camera or Royal Msil that makes it look hazy :shock:

Really pleased with how this brew has ended up.... and seems to have gone down a storm.... will definately do this one again when I start brewing again around September

Looks good. I've been playing around with candi sugar too. In fact my "old greggs old ale" was a very similar recipe to yours, bar final colour and FG (mine stopped at 1017).

It seems the lighter candi sugar isn't as bad for sticking to greaseproof paper. I think its because when its really hot it scorches the paper, destroying its qualities. But greaseproof is definitely the way to go.... Having experimented with using a plain bowl the first time!
Also I find there is no problem with chucking any paper that is stuck to the sugar in to the boil at 15 mins, it melts off, and the paper is filtered by the hops. Not sure if I would do it if I had an electric boiler though, possible burning on the element.

Thanks that looks fantastic! i bet it tastes great!

I reckon you might have had it as its from your neck of the woods, but i once sampled at a beer festival a pint of Hexhamshire Ales - Devils Water, it smelt amazing, like pure toffee, it was like poking your nose into Thorntons.

Sadly it didn't taste much of toffee but the smell was simply amazing, never encountered anything else like it.

Is yours similar to that? Ever had that as a pint?
