Mmm... This beer is superb. The spices have really married to the hops now and it all works wonderfully. This one has been added to my keepers folder. A new annual brew!

i do a ginger beer and throw about 90 g of rough cut unpeeled ginger thats been steeped in boiling water (with the water) into each firkin. i dont get a haze problem, i find that when adding ginger into the boil, it fades after a while while this method retains the lovely ginger flavour and aroma. obviously this isnt much help if your bottling it!

Excellent work Floyd, that looks glorious! Glad to hear that you're up and brewing again.

I like the idea of adding it later. Dark Star brewery down here add Chinese stem ginger to 'secondary'. May experiment with that.critch wrote:i do a ginger beer and throw about 90 g of rough cut unpeeled ginger thats been steeped in boiling water (with the water) into each firkin. i dont get a haze problem, i find that when adding ginger into the boil, it fades after a while while this method retains the lovely ginger flavour and aroma. obviously this isnt much help if your bottling it!
