I don't know why it tastes grainy - maybe the flaked wheat??

Give it some time - maybe another 2-3 weeks.

wasn't impressed with a bottle after 6 days conditioning
I think I spoke too soon on this, after another 4 days it's much improved, I'm thinking some of the harshness came from pouring the yeast sediment, this time around I left it in the bottle, and the brew is all the better for it. The sharp 'grain' taste now has mellowed and just tastes amazingly fresh, not really Hoegaarden yet, can't wait to see what happens over time :)

There does appear to be around double the sediment than with a kit. The yeast cake wasn't as firm when I racked as a kit, I take it because I let too much boiler trub through, and this has in the end made it into the bottles, effecting the taste when poured in, careful pouring should sort that out though :)

Quick update, now this has had around a month, it's cleared down a lot more, there's a substantial amount of sediment, which is best left behind when pouring. Not a huge amount of head retention, but it's a lovely brew. As a result it's taste has really improved, I'd not claim a 100% Hoe clone, but fairly close, I think i may prefer this... my stocks have all but gone due to the popularity of this with my friends and family, so a big success for my first AG :)

I've got a 2nd lot of ingredients and will get another batch on soon, but this time will consider racking to secondary FV and crash cooling it to get less sediment in the final beer, also going to try kegging it, so see if there's much difference.
