Hi NZ, When skimming, whenever possible, you only want to remove the darkened part of the yeast head leaving the whiter yeast covering behind . It would be very difficult to do that with a sieveWhats with the fish slice? wouldnt it be better to use a sieve and remove the foam?

You could always use the sieve to Dab the dark head off but I couldn't get the hang of that


Going to rack the broadsword to secondary tomorrow but thought I'd check the FG again just so I could sample the trail jar
The fg has fallen to 1006 which is a bit low, target was 1009, but I'm not too concerned about that
If you like citrus hoppy ales then give this one a go. It is naturally, a very immature ale at the mo as it's only had 10 days in primary but the hop aroma is fabulous and the taste is great too, though a little too bitter for the wife at the mo.....that's a shame

A very refreshing beer, the Fuggles give a good hop character while the Styrian Goldings give superb aroma. The use of Carapils ensures this beer has a good body, slight residual sweetness, and a very pale colour.
To me this sis an ideal summer quaffing ale, very light and the citrus tasting notes make it very refreshing.
Until it matures I can't say for definate but I might cut down on the bittering hops so the missus can enjoy it awsell

Tapped this tonight and guess what.....it's cloudy
Tastes fine, not too bitter but maybe a tad more than I'd really like. A really good hop profile but prefer Styrian Stunner overall
This one again had the Aux and concentrated IG treatment.
I'm just going to call all my beers wits and to hell with cloudyness...
(though hopefully this will be the last cloudy one

I hate to hijack this thread but I have a quick question for Steve_Flack. You posted that you used Magnum hops with an alpha acid rating of 13.1% in a Munich Helles. I don't know that I have the cajones to try and use a high alpha acid bittering hop in a helles, can you comment on your experience doing that? When making this style I would tend to stay with the typical German noble hops, am I just a wimp or do you know something I don't?

On the Broadsword note....I posted the other night that I found this beer slightly more bitter than I really liked...so much so that I tapped another one of my ales because I couldn't cope with too much of the bitterness.

Tonight looking for something lighter than Old Rambler I returned to the Broadsword.
This is a damn fine pint which rivals the Styrian Stunner in my books....I'd go so far as to say I might prefer it but without the 2 side by side it would be an unfair comparison

We had a chilli pizza the other night and I think it really affected the old tastebuds....maybe stripped them bare for the hops to work on

The bitterness is well balanced with the aroma hops....all in all very happy...hmm...2 stock pales...where will this end
