As it's been 8 days since pitching the yeast, I thought that it was time to check the gravity of this brew.

It's got down to 1.010, which is a bit lower than I expected, especially as my OG was higher too.

Anyway, the aroma of the sample was very nice and instantly reminded me of many pub real ales that I have sampled in my time.

Taste wise has a nice Celeia hit that is quickly masked by alcohol :-( For a brew that isn't relatively strong, I wasn't expecting that.

You can all tell me to stop fussing, especially as it is only on day 8, put it's hard not to pick fault in something that you've laboured over.

As you can see from the pic, it's almost clear and lovely and pale for spring/summer enjoyment.

I'll probably rack it off the extensive trub tomorrow and bottle away next weekend.

Leave it alone for another couple of days. The yeast has probably not finished clearing up yet. Check the gravity over the next two days and if it is still 1.010 then rack off. Don't blow it having come this far, one of the biggest faults in AG beers is taking the beer off the yeast to early.

Gravity checked again last night on day 12, it's now down to 1.008!

It tastes a little better already now too :-)

I may now rack into a clean FV tonight if I get time.

Good technique, and the longer time still gives yeast a little more time to clear up, it's also a good time to fine if you like that sort of thing. I have had the same irritation and hate wasting 1/2" of beer just to make sure I have a clear beer.

Successfully racked into a clean FV and the S-04 trub hardly budged as I tipped my primary FV to get that last bit of beer into the syphon cane.

I've now got approximately 21.5L of very clear beer that will go back into my brewfridge to get slightly chilled until Bottling day on Monday :-D
