Update: It was down from 1053 to 1012 by day 10.
Still fermenting at just under 30C
Not the fastest of yeasts but already getting some interesting flavours of fruit with a balancing sharpness.

Hi jmc,
I really like the look of your recipe (I was looking for one that included barley, wheat and rye. Bingo!).
Have you tasted this yet?
Would you change anything at all if you brewed it again? Apart from the heater!
Dean.

Only 9 days ago (on 14/4), I kegged half in a small 11L corny and bottled the rest.
I did 1L PET bottle so I can tell from that that bottles have some condition but its early days and beer not bright yet and yeast seems to be sticking to side of bottles, however its a nice colour. I'll chill one and give it a taste this evening.
During fermentation it developed a nice fruity & sharp flavour so I'm hopeful.

Ah, your yeast is sticking to the side of the bottles too eh? My second Saison (I think) did the same thing but the yeast only stuck to the side facing the window in the room the bottles were in. Is yours doing the same or is it an all-over coating?

Faint coating on all sides. Hopefully not due to my cleaning regime. I twisted some bottles and some yeast drops down. Not too worried as not expecting it to be super-brilliant.Lugsy wrote:Ah, your yeast is sticking to the side of the bottles too eh? Dean: Next time I do this (assuming heater fixed) I'll probably be less cautious and ramp up temperature quicker.
Saison Dupont yeast just loves it warm.
As promised I had a taster tonight and I was pleasantly surprised considering its only been in bottles 9 days.
Chilled to about 5C, nice fizz, white frothy head with lacing. Nice refreshing summer beer. No yeast tang. Cross between a wheat beer / amber lager with lots going on, (fruity and balancing sharpness). I'm hoping that its still very accessible for those not a fan of wheat beers & saisons.
Definitely moreish, so I'd better check tasting by putting another one in the fridge.

Lugsy: You can hopefully just make out yeast on pic below:

I had that problem on one batch a couple of years ago. Never worked out why and no amount of twisting or shaking could get it all off. A right PITA! Persisted all the way to bottle washing.
Thanks for the tasting. I am inspired to make one, just need to decide on must how much unmalted grain to squeeze in mine.

I had a sample of one of these over the weekend. Lovely spring / summer brew (if I say so myself).
