Bump.

I bottled the remainder of Batch 1 last weekend: 12 x 12oz longneck bottles, 1 bomber bottle, a half-gallon growler, and a 5L mini-cask. A vessel for every occasion. :)

As a reminder, this batch was fermented with a dual strain: 2nd-generation Windsor (selected for higher attenuation) and a Marble Dobber bottle culture (the historic Gales strain, according to the brewer). It definitely fermented down quite dry: 1005. I tasted the hydrometer sample and was surprised how much caramelly sweetness remained, lots of malty complexity. I'm excited to taste again after some time bottle-conditioning, with a little carbonation to splash things around.

Here's a picture of the finished beer, the version using Windsor and Gales dual-strain. It's clearer, lighter bodied, with a drier finish, emphasizing the hops and nutty tannins a bit more. Tasty stuff.

That looks delicious Seymour, lovely stuff. I have SWMBO and SWMBO junior away tonight so naturally I am brewing this evening and I'm making a mild. Lately I package my brews between two half size cornies to share with my dad, and he loves the milds - he's in his 60s and can remember milds when they were more widely available in the UK.

How about that for red colour?

While brewing today, I enjoyed my last bottle of Seymour Dark Mild No.3 from August 2013. Who says low-grav beers can't keep?!

Still delicious, with just the faintest sourness which I happen to love. Too bad I don't have any more.

So now you HAVE to make a thread about how you make the molasses. I can get it in small 200g jars here but it costs so much its almost perverted.

That's a good idea. I've gotten several requests for that, so I'll try to write a How-To soon. It's extremely easy, and a much bigger aspect of English brewing history (and therefore, the character of English ale) than most people acknowledge nowadays.

Thanks, mate. The increased strength is a great idea, though I think her recipe is simpler, and like 15-20% crystal if you can believe that!

As always Seymour great work, using this recipe with some minor tweaks to make a rebrewed Mild today (after a complete brewing disaster on Friday losing me 10ltr batch).

Can I just ask if molasses in US,is treacle in UK?
