Firstly please accept my sincerest apologies for the lack of pictures and / or commentary yesterday, it wont happen again :oops:

I have decided to bring brew number two forward to today. The Anglo American beer has gone out of the window as I can't get hold of any Amarillo hops so I've decided to try another English bitter this time fermented with liquid yeast. I have gone for the WLP023 Burton Ale yeast.

I know Delboy and I were considering using it so I've bitten the bullet and bought some, full tasting report to follow Del!

Recipe as follows

Grain Bill
4.2kg Pale Malt
0.3kg Crystal Malt
0.2kg Torrified Wheat

I'm planning to mash at around 68C for 90 minutes in around 12l of water.

Hopping Schedule
25g Northdown - 90 Mins
20g Fuggles - 15 Mins
15g Northdown - 15 Mins
40g Styrian Goldings - 5 Mins[/img]

It should weigh in at around 35 IBUs OG around the 1045 mark.

Any thoughts / suggestions etc?

I'm quite excited about this little experiment with liquid yeast if it works out it will open a whole new world of possibilities for my beer.

Right the brews have been named.

Brew number one is "Merry Men Ale" as it was a Jolly Roger variant made with Nottingham yeast and at 1050 it'll certainly make me merry.

Brew Number two is The Burton Beast made with Burton yeast!

I was just planning on waking the yeast up like I'd do with dried yeast rather than making a full blown starter. Apparently there is enough viable cells in the vial to pitch direct according to the tube.

Well I was until I was informed that the liquid yeast I was using probably won't have enough viable cells to do a proper job, other than that it's going pretty well I'm just about to make my last hop addition now.

The rest you can pitch some dried yeast into. It's nice to use a different yeast but it isn't the be all and end all :wink:
I've just got the message after pitching the yeast #-o - if nothing has happened in 48 hours I'm sending in the S04. The starter was fizzing very slightly when I pitched it so all may not be lost

I'm getting cross eyed with all these post :lol:

No worries there AR I'll let you know how it turns out. It looks like there will be a few days of nail biting in our house waiting to see if the brew will take off. Cross your fingers for me!

Don't worry about the yeast I'm sure it will be fine :wink:

I've been amazed what I've learned trying to build a 4ltr starter. Lag times are so visual when under airlock :shock:

The way I see it is it's got two choices it ferments or it doesn't! I suppose my expectations will be skewed by the speed my usual "flying starter" gets things going, I'm just trying to think of how long it took for a packet of yeast sprinkled in top of a kit to take off, has it really been that long since I've brewed a kit?
