This looks good, agree about the lower ABV. I've been looking at this beer on the BeerSmith recipes for a while, I love Centennial. What is your target FG, I'm guessing around 1.013 for that yeast and mash temp? Just thinking about making it myself, and how dry to aim for...

Not used WLP090 before either, just been reading up and it looks good. I hate using WLP001, it takes ages to drop. Could be the next brew.... :D

Can't give you a precise figure, but fairly fast. But bear in mind I mash out to 75C with my herms before pumping over, so it doesn't have too far to rise. I would say around 20 minutes from the end of pumping a 30l volume - which is pretty efficient considering the induction hob is 3kw.

Beersmith gives me 1.053 SG and 1.010 FG, with a mash temp of 67.2, with an ABV of 5.5%. I started at 1.052 and will probably get the same FG (was 1.013 yesterday will check again soon :) ).

Here's a boil pic. All my brews so far have been in the shed at < 10C, mostly less than 5C ambient with no issues at all. I boil off about 4 litres an hour which is decent enough I think - although of course there is always scope to insulate if you feel the need.

How long does it take the induction hob to get that sort of volume up to a boil?
I timed everything during another brew today, for my own interest as much as anything. From mash to boil was as follows:

8:55 Mash in.
9:50 Conversion complete, stepped up to 75C mash out.
10:00 hit 75c and diverted recirc to kettle to pump out wort (I don't sparge at all any more). Induction hob gets turned on to max (3kw) the moment the first runnings hit the kettle.
10:07 finished pump out.
10:28 29.5l of wort boiling in kettle.
10:32 first hop additions.

SO - pretty quick, but remember that during pump out my wort is being heated by a 2.4kw kettle element in the herms before it hits the 3k induction, so for a while its getting > 5kw of heat.
