Following your experience with all the grain in one bag I asked geterbrewed to confirm my 3 custom grain kits would be sent in 3 bags haven't heard anything to the contrary, other wise I'll have 120pints of a stout wheat beer hoppy damdh (double malt double hop) on my hands...

Well this seems to have stopped at 1020. I've decided to cold crash it for a couple of days and then bottle it on Friday. Fingers crossed, perhaps the 30 minute mash has caused the high FG. Gervin would normally go a lot lower.
I've decided never to leave yeast to chance again ever! The most important thing we do is something I sometimes get lazy about. Lots of impromptu brews with any available yeast lobbed in. The yeast should be the first consideration, build the brewday around yeast prep. Starter every time now, even if the yeast is dry! Some of these sellers don't refrigerate it, obviously. I want to know that I am pitching live healthy yeast in good quantities. No brewing until I've got yeast sorted.

I was always surprised at your use of dry yeasts when everything else seemed to be highly considered. I think you're making the right decision.

Ive used liquid yeast a lot over the last year, but recently did three brews with dry yeast. Its convenient and it needed using. With this latest experience I feel like sacking dry yeast off, and making a liquid starter every time. Bottled this yesterday, tasting really good despite the attenuation issues. It's not a summer quaffer, it's very full of malts and hops, rich and luscious. All the kettle hops stayed in it til bottling time, and i like the result. Looking forward to it.

What colour did you get mate? My next brew is going to be an Indian Red, using cara red and brown malt, cystal 80, munich and MO. simcoe in the boil, citra and centennial late on and dry. Aiming for 35 IBU. Hoping for a very red ale....

It's pretty red, a deep red, if I remember right! But it wasn't very clear when I bottled. I'll post a pic when I sample the first bottle in a week or so. Brown malt is an interesting addition, how much? I've used amber malt in reds and liked it. Rye and crystal rye work well too.ManseMasher wrote:What colour did you get mate?
