I just had a taste and it is good!, I dont think it will ferment down much more either by the taste of it - initially sweet with a malty after taste, no hint of bitterness at all....

It will hit its stride a proper in 7 seven days, but it is a good beer to know when stocks are out or worryingly low :wink: and the grist has enough flavour to please, though I must admit I would like to try this with a interesting late addition hope. I think first gold is calling.
I will say that this or a hefe fits the emergency brew bill. Althhough with the amount of time I have spent in germany in the last few months I am bored of Hefe at the moment :shock:

Phil,

You are spot on about the 7 days. Drinking it this weekend and the taste has definitely rounded out.

I think I may have over egged the hops, as mine has a bit of bitterness, which I don't think is meant to be there. The problem was that my scales gave out and I used another set with 25g divisions, so it wasn't that accurate.

Its still a great ale though, I really like it.

My folks babysat last night and my dad was super-happy to have access to the keg. He was blotto when we got back :lol:

I am unsure about Amber Malt at the moment though, but I think this is just me. Y'see I had an infected Hefe once with an attack of Band Aid, and green beers made with Amber just remind me of that and I panic. My last two batches have this and are just maturing enough to see it off. I can taste a little bit of it in this brew but I can understand why its in there - it lends a very slight Marmite-eytang … to me anyway. How do you find the taste of Amber?

I was wondering if you would pick out the amber,(I know your not that keen :wink: ). I think I need to try this recipe without any amber with S04. I find it gives a biscuity(think digestives) taste. As a malt it has a transitional flavour, that changes over time, and also it seems to sit better with different hops.
There are many more tweaks I wish to try with this recipe. Plus there are a few other mild recipes I want to try too.

I think I have been using Starsan incorrectly. I've lost my last three batches :cry: :cry: :cry:

So back to VWP for the moment, a TEA in the bucket yesterday and another Phil's Mild slated for brewing asap.

SW, why not, I know some of the brewers in the colonies have been doing that. As long as its a balanced beer I can no problem in that. :D

Current suspects are my siphon hoses, which I have on thinking about it, have not been scrupulous with :oops:

Never mind. New hose on order and another brewday planned for next weekend. The magic of mild is that its ready so soon, so my drought can be sorted quickly. Hooray!
