Good old S04 has taken it down to 1.014 tonight, 36 hrs to go before kegging. The S-04 flavour is well evident now, shame 'cos the Hop Back was so much brighter. I'll be back to this yeast with 4L starter sediment and some sort of aeration system, but at least S04 is making a style correct beer

This is a pint of Belhaven 80 Shilling with my Hop-Back yeast from my small batch i used to produce the slurry for my 120 litre brew nice & clear brew.

Nice & smooth but slightly watery for a Scottish ale probably as it's slightly over attenuated for a Scottish ale.My 120 litre brew still in the fermenter shouldn't be slightly watery as it has 20 % Caramalt & 10 % Munich Malt .I go back offshore on Friday so i am going to leave it in the fermenter at 5oc under air-lock for 2 weeks until i get home.It's at 1.014 at the moment i will get the wife to change the ATC to 5oc on Friday night to stop it going below 1.012.

This is down to 1.010 after 2 weeks in the corni
. There's no stopping some yeasts
Tastes really good too, a little sweet note to it I'm guessing from the lower OG and maybe a little from S04, but you can tell it's meant to be SL.
Since a woozy Sunday last, I am growing on the dregs from 4xSL bottles in 400mls of 1.040 DME. Plan to 10x that into 4L this weekend for the first of 3 brews with it Friday week.

For some reason I have visible tiny particulate matter creating a haze on this one. Not to worry 'cos it tastes very nice and although I don't really know why, this beer did have the stress of finishing off with a new yeast which I've not done in ages so I'm pleased to have the tasty beer I have. S04 flavour is there and ABV isn't quite SL, so the body isn't right and there's a fruitiness (in reverse order) that wasn't intended. Hopefully more recently I'm using reclaimed HB yeast to better effect and although not in another SL clone I look forward to the results.
