Chris, yeah I know what you mean. I am convinced that the problem is exacerbated by the water up here though. I'm sure commercial breweries don't age hoppy beers for a month. Thats a great suggestion about the Morrisons water, thanks, i'll definately try that. Time to get one of those Salifert water testing kits I think. £10 for a water testing kit argh :?

You could be right on that mysty, we have soft water (ie low alkalinity) here too, though I routinely add gypsum or CaCl2 depending on the style to get the mash up to at least 50ppm, to help with pH, and flocculation etc.

The previous time i made SNPA with perle it was before i started water treatment and it was evil nasty (went down the drain) this latest version also with perle is also nasty but not to the extent that it went down the drain. Perhaps the water treatment is smoothing out the 'astringency' somewhat.

Well I took a jaunt out to Morrisons, as I suspected the own brand water wasn't the same stuff you get in Engerland, we get Glencairn spring which is very low in bicarbonates. Best I could do was Britvic's 'Drench' brand for 70p for 2L, with a whopping 292ppm bicarbonate. I just went with it, going to brew a hoppy ale tomorrow. £5 Salifert kit on the way :D

Nope, it was free :D

EDIT: Wait, spoke to soon. The guy emailed me and said the system didn't add p&p, have to pay £1.79
