This stuff is really interesting and I've never calculated efficiency before - I usually just brew it and drink it.

So, excuse the thicko question (I'm not absolutely clear from Jim's article) but at what point do I take the hydrometer reading? After sparging? After the boil? After cooling/before pitching? I'm brewing on Friday and I'm now going to have to do this calculation.

For a given volume I often see a couple of points drop from the pre-boil gravity to the pre-pitching gravity. Several factors are at play but I guess proteins dropping out of solution as trub may be a factor.

I always calculate my efficiency on the pre-pitching figure because that is what I've ultimately finished up with for a given amount of grain.

I always calculate brewhouse efficiency which means taking the gravity reading prior to pitching the yeast.
Mash(and sparge?) efficiency is calculated by taking the reading prior to the boil.
It is impossible to reach 100% efficiency due to wort losses in the mash tun and in the copper, extract remains trapped in the spent grains and hops.
To me 75% efficiency is fine anything above that is a bonus 8)

24hrs after pitching the yeast (starter) the SG had dropped from an initial 1046 to 1016!!! - Is that normal?? It's only a 10L (well 9.75L) brew and i used 11g of Gervin Ale Yeast, it did get off to a flier. Also had a cheecky sip and it tastes really malty and not very hoppy, (am i sampling too soon)i wasn't able to get what i'd call a very vigorous boil but the hops were certainly circulating around a lot and there was foaming which i folded back in, oh yeah and the house stank (like a brewery) If it helps i used 32g Fuggles (start of boil) 8g fuggles last 15 mins? Worried :? :cry:

Yep, it could taste very different once it has matured. It's always difficult working out utilisation, even more so with smaller batches like this, but I'd expect this to be mildly hopped say ~28 EBU. Good stong fermentation suggests the yeast likes your wort any way :)

96% Pale, 4% Crystal, 28 EBU, OG 1045 - looks like a classic to me. I can taste it now... :=P

If your efficiency had been higher then the hopping rate would have been out of whack - bit of luck there, the brewing gods must have been smiling on you :lol:

I'm pretty sure it was a rolling boil, the hops we're circulating around quite a lot but it didn't look like a....couldron or anything, what happens if it's not a good continuous rolling boil.

Well, you might not get good hop utilisation, ie not as much bitterness as you want. You might not degrade protein enough resulting in less hot and cold break. This leaves too much protein in solution which can cause clarity problems during storage as it hazes out in the cold, or with age. That said some advocate a gentle boil, just enough to keep the hops rolling. I prefer to boil it hard, though my boiler is a bit too vicious on a 25L brew. I have to sparge to 20-25 degrees below OG to hit the target OG at the end of a 90 min boil.

One thing with recipe calcualtion. Do not base your ingredients on your final fermenter volume. If you do you're not allowing for losses to hops, ullage, etc. What happens is you end up diluting your ingredients because you calculated on the basis of say 24L in the fermenter but the ingredients were used in say 26L of beer, you having lost lost two during brewing, and finishing with 24 in the FV, or topped up to 24L. You're about 6% understrength in hops and malt. I always calculate my ingredients upon a 26L brew, and aim to finish with 24L. I almost always get what I want as a result, and if mash efficiency is good, I don't have to sparge the hell out of it.

Well, i've just taken another reading....1008 so from a OG of 1046 i make that 5.1 after 2 days :shock: :shock: :shock: had another cheeky taste, bit happier with it now, maybe things are going to be alright after all. :-k

PS. Put SWMBO to good use tonight designing beer labels in powerpoint, she's done a good job and enjoyed it. \:D/ Home Brew - Get the family involved :lol:

Very nice, i must start designing some labels. Pretty hard on the ink for bottles but i reckon one big one on the cornys would look cool 8) .

Cheers George it's This One don't think you can get it anymore? not sure, it's pretty good for this sort of 'snap' photography, it's only a 3mp but i like it :D
