I'm over in Ireland, Dublin to be exact. My beer won't be ready for another while yet in any case, I'm lagering for at least another 4-5 weeks at 1c now and then will have to carbonate and possibly reseed if I want to speed that up.

Mines not ready til mid July... used to live in Dub myself, was there for work, loved it but v expensive!

Nice work Grice, I think you've relly done well, esp for your first lager.
That's a pretty high OG for a pils, should be almost like a Czech Maibock!

Down to 1.021 today. still buttery. I think I'll cool the sample down a bit and taste it again (brought it up to 20 for the reading, and also to watch it, I'm weird like that), but I guess I'll bring up to 12 today then 13 tomorrow, leave a couple of days, and see if we're fermented out / butterless. If that's the case, I'll transfer to secondary and drop 1º a day until I'm at lagering temps and leave it a few weeks!

Looks like a good brew day !

Sounds like a nice pils :) Should be a nice and strong!

I have used a 4l starter and still needed a diacetyl rest with the Bavarian yeast I used, so need to worry too much at this point...

Hmmm I was drunk the other night and took a sample of mine, I might have infected it in the process, let's hope it's ok.

Well that wasn't very clever, now was it? What did you do, take a slug right out of the FV?

I wasn't that drunk. I used a ladel dipped in star san to pour into the glass, but in the process poured some down my hand and back into the fermenter. I might be lucky and have gotten away with it.

Hmm, down to 1.018 now. Did another forced diacetyl test, I can still smell some. Was up to 14ºC to try and clean it up, I've bumped it to 15, and I think I'm going to ignore it for a few days. It's annoying as it's cutting into lagering time.

You're allowed a bit of it in some of the styles, the helles, but if it's lots then Adam has some ideas on cleaing it up when bottle conditioning.

hmmm referring to Adam....getting my forums mixed up.

Check out krausening as a way to clean up diacetyl in conditioning phase.

Cheers. I did a diacetyl force again, hard to detect now. Transferred to secondary to lager, will be dropping temp 1 or 2c a day til I hit around 4...

Recovered the slurry, I'll be reusing that bad boy!

Hmm. Had a little sample, its been lagering a few weeks. I think I can detect some diacetyl, and it's not that nice. It looks like I will need to kräusen it on bottling ... anyone have any experience? I have recovered the slurry from primary, but not sure what I can use for the starter wort ... make a small batch of the same beer? What about hopping?
