Got spot on 23 litres in the FV, will be taking a gravity reading and pitching as soon as its down to temp as I use no chill. Should mention it was put in the FV last night.

Don't know if I'll use Windsor again. You're right, Jim it does kick off quickly and goes like mad, but I always have a problem with the early finish. I've recently brewed a mild with Windsor which stopped at 1016, (had the OG at 1042 to account this). It stayed at 1016 for well over a week, at which point I kegged it - fine. The odd thing is, and this has happened every time I've used Windsor, in the keg it has dropped another couple of points in just over a week. There are only two reasons I can think why this happens:

1. Transferring the beer into keg has roused the yeast enough to start it munching again - how likely it that given crash cooling for almost two weeks?

2. Addition of priming sugar has invigorated the yeast enough to make it carry on eating sugars it had previously given up on.

Can't think of any other variables. Either way I think prefer something a bit more ruley.

My frankly over elaborate(!) 3 coil immersion chiller ready to go in to be sterilised in the hot wort...

Cooled to 80 C and steep hops in...

Chiller on. I start using tap water to do get the wort down to about 35C then switch to a FV of water chilled down to just above freezing fed through a chugger pump to drop down to 18-19C as quick as possible. I started doing this during the summer when the tap water was about 20C but going to keep it up. I find this give a really good cold break and the finished beer seems brighter as a result...

Haven't had time to sort my photos and write my post yet, but my brew from last night is fermenting away @19C with S-04 (was supposed to be WLP002, but that's another story)

Still don't really know what went wrong, but I ended up with 19.5L @1.042, instead of 20L @1.050 :| :oops:

Think I've created the younger cousin - Jim's SB (Special Bitter)
