Splitters Suffolk Bitter - 30.01.08

Splitters Suffolk Bitter

25L Batch

3500g MO Pale Malt
250g Crystal Malt
100g Chocolate Malt

20g Target (aa9%) - Start of boil
20g Golding (aa4%) - Start of boil
14g Golding (aa4%) - 20 min from end
28g Golding (aa4%) - Steep for 30 min hot break
14g Golding (aa4%) - Dry hop in barrel

Mash 75min at 65'
Yeast - Safale 04
Target OG 1.042
Target FG 1.012
Est. ABV 3.7%

7th AG - Got this one mashing now. brewed it a couple of times last summer and loved it!
MMMMMmmm, goldings. 8)

I have tweeked the recipe slightly by reducing the 'flavour' addition of hops from 28g to 14g,
i'm also putting them in 20mins from the end instead of 30 mins.

It'll be interesting to see if i can notice a difference.

Also the Target aa content is up from my last batch 7% - 9% which will increase the bitterness,
something i wanted to try anyway so I've left the amount the same.

What do people think?

Target can be a bit harsh but, it looks good to me. Have a good one 8)

Yeah, its seems most prefer Challenger for bittering but i was given some
Target last year so used it and enjoyed the results so i got some more.
May give the Challenger a go next time i put in an order though,
or any other recomendations?

Just switched the boiler off!
All went pretty well, sparge was abit slow, :?
had to blow back up the pipe to clear it.
Apart from that it was all good. :)

Will let you know how the OG looks when it has cooled.

sounds a great brew! I brew a Best thats very similar except no chocolate and challenger as the bittering hops may try a little chocolate in it next next.

Pleased it went ok for you splitter, nice one!

I have used Target hops for bittering myself & they mellow out somewhat after a maturing period, although 20g only blended with Goldings sounds ok to me.

Thanks guys, ended up with 25 Ltrs at OG 1.042. :)
Its bubbling away nicely this morning.

This recipe started off as a twist on adnams, a favorite of mine,
The chocolate came from wheelers adnams recipe, I think he recommended 75g
At 100g its a fairly subtle flavour and doesn't darken the brew too much.
I'll have to give the challenger a go next time as i havent used them yet.

I'll let you know how this one turns out!
