Brewday 24th March 2008 - Schiehallion Revisited

Hi Folks

It's been way too long since I did a brewday post :oops: so here goes!

I have decided to revisit the Schiehallion I brewed in January, the Lager is definately a keeper however there is a faint sweetcorn aroma to it that I think came from the carapils malt I used so tomorrow I will be attempting to produce the same lager without the unusual flavour.

Recipe is as follows (23l @ 75% efficiency)

Grist
3.7kg of pale malt (Halcyon)
0.3kg of torrified wheat

Hop Schedule
16g Hallertauer Northern Brewer 7%aa - 90 Mins
20g Hallertauer Hersbrucker 3.8% aa - 90 Mins
10g Hallertauer Hersbrucker 3.8% aa - 10 Mins
30g Hallertauer Hersbrucker 3.8% aa - 10 Mins

That should come out around 1.038 @ 25 IBU's

Fermentation will be courtesy of some Camerons Lager yeast I have been keeping in a demijohn, this is a pretty savage and clean yeast that I anticipate taking the wort down to somewhere in the region of 1.006 :shock: so I should hopefully get something in the region of a 4.2% ABV ale.

It's the second brew I've done in our new shed, it's cracking I have more space in there than I have in our kitchen :lol: Here are some pictures.

Here's the grist mashing at 68C in 14l of water. I'll be leaving that tucked up overnight and finishing the brew tomorrow.

I got all the way to the top and sat on the summit and decided that I really didn't like heights :roll:

According to MO there's challenger at the start of the boil and he recommends a bottom fermenting yeast capable of 5-14c. Not used the Cameron yeast, any good? Good luck anyway J_P :D

I checked the book, Norms Almanac and various threads here and then came up with my own take on it :lol: Northern Brewer were what I had to hand so I used them. It tastes grand which is the main thing.

The Camerons yeast is a really clean bottom fermenting yeast that has done the business for me before I'm hoping it'll be up to the job again tomorrow.

I haven't been able to find the lead for the damn element I bought, it's got two round pins and an oblong one :-k

J_P, are there any car boot sales or flea markets in the Darlo area? You sometimes see the old style kettles & leads on the odd occasion. My father picked one up at Hartlepool flea market a while ago, no prizes for guessing who has it now!
