0.25kg Caramalt
0.12kg Crystal
0.32kg Wheat

60g Bobek 60 mins
30g Bobek 00 mins steep at 80'
20g Bobek Dry

Yeast S-04

Looks great!

Collected 23L at 1.054 - considerably higher than expected.

Calculated my efficiency to be 80% - usually getting around 65%. Could be that the MO was brand new yesterday so very fresh, also that I left the water overnight with a campden tablet rather than taking it from the tap the same day.

efficiency didn't improve by a lot - I added 6.0kg of MO instead of 5.0kg... knew I was feeling rough... Hey ho

I know it hasn't had its full maturation time but tried some of this and it has a really alcoholly taste to it - not overly harsh but not incredibly desirable... Will this taste remain? and if so is there anything that can be done about it to alter it? Would it be possible to dilute the beer down a bit with sterile water - or would that mess it up...

I assume that it has this because of the grain bill - would that alone do it or may it be due to high fermentaion temps - it was a hot week when this was fermenting...

Taste every month and in about 8 weeks it will all of a sudden become a different beast.
