AG#4 - Genius (Guinness Clone)

Post by BrewStew » Mon May 05, 2008 11:34 am

Hi Folks!

Apologies for not being around in a loooooong time. I think about 4 months now at least?

The past four months have been hectic, and my old job left me with not much energy and time to get any brewing in... but i've since changed jobs (two weeks ago) and it's a much nicer job, more fun and less mentally/physically draining (and as it's bank holiday monday!), i've managed to get a brew in!!! YAY!

As my Guinness Clone went down so well last time i've decided to do it again, and it's currently mashing away,

i realised as i was weighing in the ingredients that i only got one 500g bag of flaked barley from the bedford brewshop yesterday instead of two.... dammit! so i've upped the grains by 500g, and decided to chuck in an extra 250g in addition as i recall i was a little short on wort last time.

So here's the Guinness (Genius) Clone recipe i'm doing today:

4500g Maris Otter
500 Roasted Barley
500 Flaked Barley

90 Min Mash @ 66C

70g Northern Brewer Hops (60 min boil)
Irish Moss for last 10 mins.

I've no idea what ABV i'll get, and to be honest i dont much care if it tastes good :D but with the extra grains i'm hoping it's above 4%

thanks folks :)

too right daab! i'd been looking for a new job for at least 6 months, so i'm glad i finally got out!

i'm just about to reach the hot break so i'd better go tend to it.

it's been such a good brewday today, i'm expecting to be finished about 3pm so a 5 hour brewday isn't bad.... i'm half tempted to get another brew in!!!

i've got at least 5kg of maris otter malt left, about 50g of goldings, 113g of northern brewer and 113g of styrian goldings.... any suggestions :D

forgot to add, i'm not to keen on overly hoppy beers. so keep that in mind with the suggestions :)

All Done and cleaned up! :)

This time I wasn't as short on wort in the fermenter, coming in at 17L(ish) when the tap ran dry.

The gravity stood at 1.060 so I had room to water it down to bring it to 20L, enough to fill a corny after racking from the trub.

the OG at 20L stands at 1.050 and the starter is in! - run my little pretties, run :D

i should break the 5% mark with this one.... i work it about 5.5% with 75% attenuation, is that correct? probably a little bit strong for a Guinness clone but hey, I could do with some hairs on my chest :D

I did this recipe but also threw in some choc malt to add an extra dimension. Didn't find it too roasty (still got some left), but it definitely improves with a bit of time to mature.

Fermenting: nowt (sadly). Drinking: still a few bottles of my imperial stout knocking about . . . it's rather good now
