Dunkelweizen 7-6-08

Right i have the water heating up for the below recipe

Wheat malt 2 Kg
Vienna malt 2 Kg
Carahell 0.7 Kg (edit bumped this up to 0.7 Kg)
Aromatic malt 0.2 Kg
Carafa I 0.1 Kg

Going to mash at 67-68 C
90 min mash

1 hr boil
20 IBU hallertua aroma at start
and a tad at 15 mins and at flame out 80 C (i know they aren't supposed to have hop character but its my beer so yah boh sucks to you :lol: )

Fermenting with whitelabs 300, no starter :shock: i want to try the technique of delibrately stressing them.

ooh ooh, keep us posted on this one - I'm looking into doing a dunkelweizen next brew. How / what temps are you going to ferment at?

TBH its a spur of the moment brew and that load of tosh i talked about delibrately stressing the yeast was just me trying to convince myself im not doing something completely daft :lol:

SW i'll be fermenting this at norm room temps so about 22 C.

If it doesn't i'll just chuck some dry yeast into it and let it ferment out as an ordinary dark wheat ale.

flat as a millpond at the moment if there is no sign of any life by late afternoon i'll probably bung some S 04 into it.

Yeah, I'd hold off Delboy. Not that I am an expert like so many others here - but when I recently made my demi-dunkel (sort of half way to a full dunkel) I made a starter and everyfing honest, but the yeast still took nearly 3 days to get going :shock: However when it did get going it was like something from a 1950's B movie - scary stuff - dont leave it anywhere an overflow will get you in trouble! Like on the study carpet :oops: - that was 3 weeks ago - I'm hoping she'll let me back in the house shortly!

I also regret (in hindsight) adding too much carapils/crytal (750g if I remember) its got too much body, not quenching enough - mine was an extract (using up old stocks baught before I became an AG-phile)
