Friday the 13th Dunkelweiss

Hi all,
First time wheeat beer, using BeerSmith. Brewed this Last Friday with a single step decoction:
3.00 kg Wheat Malt, Ger (3.9 EBC)
0.50 kg Carafoam (3.9 EBC)
0.50 kg Munich Malt (17.7 EBC)
0.20 kg Caramel/Crystal Malt - 80L (157.6 EBC)
10.00 gm Galena [13.00 %] (60 min)
1 Pkgs SafBrew T-58

The decoction had to be done in 2 portions + some hot water to get the temp from 50 - 68 degC, so the mash was a bit time consuming and convoluted. Will try an infusion next time for comparison.

First runnings of the wort tasted lovely. Boil went a bit awry as the electrim bin's element was dirtier than I thought and caused a bit of tripping toward the end of the boil.Got a bit paranoid about too much bitterness as 10g was a bit difficult to measure on my scales.

Hot break and running off to 1ary:

All went OK but was smelling very eggy when it went from 1ary to 2ary. The bubbles coming through the airlock today are less potent though. Fingers crossed

I've made chillies that looked very similar to that first pic :twisted: :wink:

I was concerned about the reduced preservative content from a low hop rate, so I boiled to recover 4 gals insted of 5 for a more potent brew, so hopefully less prone to infections.
OG was 1050-ish, down to about 1012-ish yesterday.

Looks good, i've made loads of lagers and wheat beers with very small hop rates and dont have any problems with infection.
