lager 20-6-08

Its not yet under way but im going to be doing a lager tonight (its almost bbq season again).
The orginal plan was to use WL czech budejovice yeast but my starter has failed to start (it was an old vial) so i'll be using two sachets of rehydrated s189. Last time i used this yeast the results were ok but nothing special, im hoping to improve it though by pitching cold this time round.
Can't make up my mind whether to do another CAP with 20 % polenta or just make life easy and do a 95 % lager malt 5 % carahelles light lager, or even something like a sam adams with a bit of crystal thrown into the mix
I'll be using green bullet (bittering) and NZ hallertau aroma for flavour additons. Probably go for 25 IBUs if its going to be a bog standard lager or up the IBUs if i go with the CAP.
Any suggestions?

The mash is on, i went with the simple recipe
lager malt 5Kg
carahelles 0.25 Kg
mash at 66 C for 75 mins
Boil for 75 mins
Green bullet 20 IBU at 60 min
Hallertua aroma 15g 20 min
Plan to dry hop this one again with the Hallertua
I won't be making the same mistake twice DaaB, im going to have just one or two drinks and not till late in the game. I have to be up bright and early anyway, going on an outing to a microbrewery for a tour and lunch with a beer club ran by one of my local offies

Good effort Delboy, I wouldn't dream of starting a brew so late, ... I wouldn't trust myself to stay off the juice once the magical drinking hour of 6 o'clock arrives

Had a good day at the brewery

, took some piccies but unfortunately only on my phone, i'll put them up later anyway if anyone is interested at looking at large metal vessels and such like.
The tour of the brewery was much better than a previous one i'd been on, lasted about a good hour and the brewer giving it was willing to answer all sorts of questions. I was buying some grain from him as well so i got to chat with him for a good half hour extra. Got to try some of his experimental new wheat beer straight out of the fermenter

very nice indeed.

The lager is almost perfectly clear and is tasting great i'll be looking forward to getting this one on tap. Next up might be another lager using either this yeast or some budjvoice yeast i have sitting about at the moment.
